Who are you Calling a Nut Ball??

If you follow me on Instagram there are two things you know about me. 1) I’m completely obsessed with my wiener dog Gretchen (Get it??! Gretchen…Wieners…like ‘Mean Girls’ yeah I’m going to go ahead and ignore the crickets haha) and 2.) I love living a Ketogenic lifestyle. Now, Keto might not be the best fit for you, and that’s OK! I’m not here to force it on you. But, those of us who have tried it (from my personal experience) LOVE it, and the way it makes them feel. Sure it sounds Back Asswards to eat fat to make you healthier and leaner, but it works! And the biggest thing is how I feel, my energy is up, I’m not hungry all the time (good bye hangry monster) and I feel lighter. Sure I’ve lost a few pounds but when I say I “feel lighter,” I mean like when you’re in a dream and you’re running but not moving. That’s how I used to feel all the time, I wanted to be active I wanted to get moving but I felt heavy and weighed down. Now I feel free. And if that’s how I feel and I love it, then how could it be wrong! (not to mention the scientific data that shows that it is a good way to lose weight and could have some overall health benefits… but like I said, I won’t mention it)

But, whether you are living the keto life or not, these are some great snack recipes that taste great and are low carb! Follow: @jennib_in_tennessee for more

An Everything Salad with Homemade Dressing:
-romaine and spinach mix
-whole avocado (peeled) and chopped
-hard boiled egg(s)
-⅛ cup flax seeds
-dressing: ¼ cup of chopped avocado (from above), 1tbsp lemon juice, 2tbsp olive oil, pinch of Himalayan pink salt, pinch of ground pepper—- mash all ingredients together until blended


Chocolate (or vanilla) Pancakes:
-1 scoop of either chocolate or vanilla vegan protein (I prefer Arbonne)
-¼ cup water
-1 egg —- mix together and cook pancakes (top with 1 tbsp organic almond butter)

Fat Bombs:
-½ cup coconut oil
-¼ cup almond butter
-¼ cup peanut butter
-1 scoop chocolate or vanilla vegan protein (I prefer Arbonne)
**place all ingredients in a gravy boat hand heat for 30 seconds in the microwave, mix and pour into small muffin tins or other mold and freeze.

Nut Balls:
-1 scoop vegan chocolate protein powder (Again I prefer Arbonne)
-1 1/2 cup oats (dark chocolate oats from Aldi are my favorite for this recipe)
-3tbsp almond butter
-½ cup ground flax seed meal (or just the seeds to make it more nutty)
-½ cup almond milk (or just water to cut more carbs)
-¼ cup chia seeds
—mix ingredients in a large bowl, spoon out small amounts and roll into your prefered size ball, refrigerate.

Chocolate Coffee Cake:
-4 egg whites
-1tbsp baking powder
-1 cup smooth almond butter or peanut butter
-⅓ cup cacao powder
—beat eggs until fluffy with baking powder, then add the remaining ingredients and place in a small (and I mean small) bread pan that has been greased. Bake at 350* for 30-40 min (or until toothpick comes out clean)


If you haven’t realized it yet, all of these recipes are super simple and quick to make and enjoy. You may call me lazy but I prefer efficient! Why make eating healthy hard when you can keep it easy, simple and tasty.
